Ube is becoming increasingly popular, and with it, the range of products is growing. You can find ube powder in online shops, Asian grocery stores, and in ready-made mixes. But the differences are significant. Some bags consist largely of sugar, while others get their colour from a colouring. Use this checklist to buy ube powder that does what you expect.
1. How much ube is in it?
First, look at the ingredients list. It is listed in order of quantity. If sugar, milk powder, or creamer is at the top, you are mainly buying a mix. Genuine ube powder consists almost entirely of ube. UBE.25 ube powder contains 99.7% ube and 0.3% natural vanilla.
2. Does the colour come from the ube?
Ube is naturally deep purple. If "colouring" or an E-number is still on the label, the colour is artificially enhanced. This is often a sign that there is very little real ube in it. Find out where the natural colour comes from in what is in ube powder?
3. Powder, extract or syrup?
- Ube powder: dried, ground ube. Provides both flavour and colour, and you decide the sweetness.
- Ube extract: a concentrated flavouring, often with flavouring and colouring. Convenient for baking, but not ube powder.
- Ube syrup: sugar syrup with ube flavour. Easy, but you are mainly drinking sugar.
- Ube halaya: a sweet paste of cooked ube. Delicious in desserts, less suitable for drinks.
4. Calculate how much you pay per latte
The price per bag tells you very little. It is the price per drink that matters. So ask yourself: how many grams do you use per latte, and how many lattes do you get out of a bag?
For example: with 2 to 2.5 grams per latte, you get about 50 lattes out of a 100-gram bag. With UBE.25, that is about €0.39 per latte. If you need 8 or 10 grams per latte, the same bag will be finished after 10 to 12 drinks.
5. Origin
Ube originally comes from the Philippines. If the origin is not on the packaging, ask about it. Read more about the background of ube in what is ube?
6. Packaging and storage
Ube powder is sensitive to light and moisture. Choose a bag that seals well, and store it in a cool, dry place away from direct light.
